If you plan to strictly grow all of your own vegetables for your family to eat throughout the season, or to also save for winter you probably wonder how much you need to grow?
Maybe your family eats a lot of vegetables, or you don’t. Every family is different.
Homesteaders or off the grid livers need to be able to grow enough for their whole family for the season and beyond.
Having this guide can be very helpful for those situations, especially if you are new to the homesteading or off the grid living way of life and want to learn it all.
Stores may not always be close when you are trying to live farther away from society. Especially if you live way up north, a snow storm would stop you from being able to get to the store for canned goods.
Vegetables are the EASIEST things to can and you can do this with basically all vegetables.
Our family loves vegetables but we also have our specific favorites which comes into play as well.
Is there a certain vegetable your family prefers? That specific vegetable you may want to double the amount you plant.
Now for the biggest question….
Does Your Family Eat a Lot of Vegetables?
One of the biggest things to consider when planning is the amount of vegetables that are regularly eaten in your household.
This will determine a basis on how much you may need for the normal growing season to eat fresh, and then how much to be stored (if you’re planning to).
If vegetables really aren’t a big thing for your family you wouldn’t need as much.
General Guidelines for Growing Per Person
A HUGE garden is not needed to yield a lot of vegetables.
Smaller gardens can yield a lot, the set up is helpful if you make a smaller garden just with wider rows.
Many people seem to think that you need a huge garden in order to get a lot of crops, but at the same time many people do not have enough land to plant big gardens.
This is good news for the smaller homesteaders. You don’t need to use an excess amount of your homestead for growing vegetables.

Some vegetable ideas and how many to grow for 4 people:
- Asparagus – 40 plants (only need to plant once)
- Corn – 15 feet
- Peppers – 3 plants
- Peas – 10 feet
- Broccoli – 5 plants
- Onions – 5 feet
- Beans – 15 feet or 3 poles worth
- Carrots – 10 feet
- Tomatoes – 5 plants
- Cabbage – 5 plants
- Cauliflower – 5 plants
- Lettuce – 10 feet
- Greens – 10 feet
- Summer Squash – 6 plants
- Beets – 10 feet
- Potatoes – 8 plants
As stated though if your family eats a lot of a certain kind of vegetable, you can plant extra.
For general guidelines, this amount should be able to feed a family of 4 plus give you some vegetables to store for winter as well.
Tailor your garden to what your family eats. Some of the vegetables listed your family may not like so just don’t plant them.
This list is more of a general list of the most commonly eaten vegetables.
Storing Your Harvest for Winter
Almost all vegetables can be saved for winter with the canning process. Pretty much anything besides leafy greens.
Knowing that you can have fresh vegetables all season and then also be able to eat the vegetables you grew during the winter time is a great feeling.
